1/2 cup raisins (soaked in warm water for 10 minutes)
2 tablespoons sugar
1 teaspoon vanilla extract
1/2 teaspoon cinnamon (optional)

Vegetable oil

Prepare the dough:
In a large bowl, mix the flour, salt, and sugar.
Add butter and mix with your fingers until it forms a crumbly texture.
Gradually add warm water and vinegar, kneading until you get a smooth dough.
Cover with a cloth and let it rest for 30 minutes.
Make the filling:
In a bowl, mix ricotta, drained raisins, sugar, vanilla extract, and cinnamon (if using).
Stir well until smooth.
Assemble the pastries:
Roll out the dough thinly on a floured surface.
Cut into circles (about 3-4 inches in diameter).
Place a spoonful of filling in the center of each.
Fold in half and press the edges with a fork to seal.
Fry the pastries:
Heat vegetable oil in a deep pan over medium heat.
Fry the pastries until golden brown on both sides.
Remove and drain on paper towels.
Serve:
Sprinkle with powdered sugar and enjoy warm!
