• Seafood: Shrimp, octopus, squid (can add mussels or clams if desired)
• Noodles: Udon or thick wheat noodles
• Broth Base:
• 4 cups of water or seafood stock
• 2-3 tbsp gochujang (Korean chili paste)
• 1 tbsp gochugaru (Korean chili flakes)
• 3-4 cloves garlic, minced
• 1-inch ginger, sliced
• 2 tbsp soy sauce
• 1 tbsp fish sauce (optional for added umami)
• 1 tbsp sugar or honey
• Vegetables (optional): Cabbage, mushrooms, green onions
• Sesame oil and sesame seeds for garnish

Instructions:
1. Prepare the Broth: In a large pot, combine water or seafood stock with gochujang, gochugaru, garlic, ginger, soy sauce, fish sauce, and sugar. Bring it to a boil, then reduce to a simmer and let it cook for 10-15 minutes to develop flavor.
2. Cook the Seafood: Add the octopus and shrimp (and any other seafood you’re using) to the simmering broth. Cook for 5-7 minutes or until the seafood is just cooked through and tender.
3. Add Noodles and Vegetables: Add udon or your choice of noodles and any vegetables to the pot. Cook according to noodle package instructions or until everything is well-cooked.
4. Adjust Seasoning: Taste the broth and adjust seasoning as needed, adding more chili paste for spice or sugar for sweetness.
5. Serve: Garnish with a drizzle of sesame oil and sprinkle sesame seeds on top. Serve hot and enjoy!
