🍓🥥 Strawberry Vanilla Bean Ice Cream with Coconut & Almond Milk 🍦

A luscious dairy-free ice cream made with creamy coconut milk, almond milk, and fresh strawberries, infused with real vanilla bean for a naturally sweet and refreshing treat!

Ingredients:
2 cups fresh strawberries, hulled and sliced
1/4 cup maple syrup or honey
1 vanilla bean (or 2 teaspoons pure vanilla extract)
1 can (13.5 oz) full-fat coconut milk
1 cup unsweetened almond milk
1/4 teaspoon sea salt
1 tablespoon arrowroot starch (for creaminess, optional)
1 teaspoon lemon juice
Directions:
Prepare the Strawberries:
In a bowl, mix the sliced strawberries with 2 tablespoons of maple syrup or honey. Let them sit for about 15 minutes until they release their juices. Lightly mash with a fork for a chunky texture or blend for a smoother consistency.

Make the Ice Cream Base:
In a medium saucepan over low heat, combine the coconut milk, almond milk, remaining maple syrup, and sea salt. If using a vanilla bean, slice it lengthwise, scrape out the seeds, and add both the seeds and pod to the mixture. If using vanilla extract, add it later.

Thicken the Mixture (Optional):
If you prefer a creamier consistency, dissolve the arrowroot starch in 2 tablespoons of cold almond milk, then whisk it into the warm mixture. Stir continuously until slightly thickened, about 2-3 minutes.

Blend for Smoothness:
Remove the vanilla bean pod (if used). Stir in the lemon juice. Blend the mixture using an immersion blender or regular blender until smooth. Let it cool to room temperature.

Chill the Base:
Transfer the mixture to a bowl and refrigerate for at least 2 hours, or overnight for best results.

Churn the Ice Cream:
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions. In the last 5 minutes, add the prepared strawberries.

Freeze for Firmness:
Transfer the churned ice cream to a freezer-safe container. Cover and freeze for at least 3-4 hours until firm. Let it sit at room temperature for a few minutes before scooping.
